Ingredients:
1/2 Small ciabatta loaf
30 ml Olive oil
4 Tomatoes, roughly chopped
125 ml Pitted black olives
100 g DairyBelle Feta Cheese
15 g Fresh basil leaves
30 ml Balsamic vinegar
Method:
Cut the ciabatta into bite-sized pieces and spread out in a single layer on a baking sheet. Drizzle with half the olive oil and grill, turning occasionally, until just golden. Leave to cool.
Put the toasted ciabatta in a serving bowl with the tomatoes, cucumber, olives and feta. Tear up the basil and break up DairyBelle Feta Cheese then scatter it over the salad. Whisk the balsamic vinegar with the remaining olive oil and drizzle over the salad. Mix gently to combine.
Good idea: Ciabatta gives this salad wonderful crunch, but you could also use ready-made croutons to save time.
