Ingredients:
250 ml Cake flour (140g)
7 ml Baking powder
50 ml Castor sugar
100 ml DairyBelle Good Morning Milk, Strawberry flavour
100 ml DairyBelle Yojooce, orange flavour
3 Eggs, separated
1 ml Salt
150 g Blue berries, frozen or fresh
Sunflower oil for frying
To Serve:
DairyBelle Real Fresh Cream, whipped golden or maple syrup
Method:
1. Sift the flour and baking powder together. Add to the milk and egg yolks and beat until a smooth thick batter is formed. Beat the egg whites and salt until soft peaks form and gently fold into the thick batter. Allow batter to rest for at least 30 minutes. Lightly fold in the berries. 2. Heat some oil in a heavy-based frying pan and allow to heat to a high heat. Pour excess oil from pan and fry spoonfuls of batter at a time for 2 - 3 minutes or until bubbles rise to the surface of the crumpets, turn them over and allow to cook on the other side.
3. Repeat with remaining batter and allow to cool slightly.
4. Serve warm with cream and syrup.
Makes 10 -12, depending on size.
